Inspired by a dish Charlie and I enjoy getting at our favorite curry place, I’m giving you a twist on your normal curry take-out.

Tikka Masala Naan Pizza AKA “Naughty Naan”

Ingredients

  • garlic naan bread

  • tikka masala sauce of choice

  • 1 yellow onion, chopped

  • 1 can of garbanzo beans (chick peas), drained

  • 1 cup chopped cauliflower and carrots

  • shredded cheese

  • jalapeno, sliced

  • red onion, sliced

  • olive oil

  • salt/pepper to taste

Directions

  1. Preheat your oven to 400.

  2. Place chopped cauliflower and carrots on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.

  3. Roast for 20 minutes while the sauce is coming together.

  4. To make the sauce: Heat olive oil in a pan over medium heat. Add in onions and cook until translucent and soft. Empty one can of drained chick peas into the pan. Pour tikka masala sauce over mixture and simmer for 20 minutes.

  5. Slice jalapeno and red onion for topping.

  6. Remove cauliflower and carrots from oven and lower the oven heat to 350.

  7. Add veggies into sauce mixture and combine.

  8. Place naan bread on baking sheet and top with sauce and cheese.

  9. Bake for 10 minutes.

  10. Remove and top with jalapeno and red onion and ENJOY!!!
