But I’m adding to my list. And since I have a new found LOVE {passion} for overnight oats, I figured my first pumpkin recipe of the season had to be a remix of my Maple Brown Sugar Overnight Oats.

All the flavors of pie.

In an easy to grab in the morning mason jar meal.


Pumpkin Pie Overnight Oats


  • 1/2 cup unsweetened vanilla almond milk

  • 1/2 cup rolled oats

  • 1/4 cup canned pumpkin

  • 1/2 tbsp pure maple syrup

  • 1/2 tsp vanilla extract

  • 1/2 tsp pumpkin pie spice

  • chopped walnuts or pecans to top (optional)


  1. Combine all ingredients (except for the nuts) in a mason jar or tight sealing container.

  2. Refrigerate overnight (or for at least one hour).

  3. Top with chopped walnuts or pecans.

  4. ENJOY!!!
