Crock Pot Pulled Pork Sliders

Fall is here. Back to school is in action. And life gets crazy. Often times dinner becomes an after thought and our intentions of eating well get put to the back burner as hunger strikes. Trust me, I get it!!! I’ve totally been that gal that goes through the drive thru after a long day because there simply is no energy left in me to cook + I probably don’t have anything in my kitchen to make + my brain simply doesn’t want to think anymore. Sound familiar? But I’m here to tell you that it is TOTALLY possible to be busy and eat well…it simply takes PLANNING.

One of my go to’s on busy days is my crock pot. I love my crock pot in the fall. It’s perfect for when the days get busy and SERIOUSLY, the smell of a home cooked meal READY right when you walk in the door? Priceless.

This pulled pork recipe is yummy over rice, stuffed in a sweet potato, or on a bun like the sliders I show below. It’s SO easy and SO yummy, I can promise you’ll make it OVER and OVER again. This fall, let’s “fall” back into being healthy, shall we?!

Crock Pot Pulled Pork Sliders

  • 2 lb boneless pork loin roast

  • 1 tsp salt/pepper

  • 1 tsp garlic powder

  • 1 tbsp red wine vinegar

  • 1 cup BBQ Sauce (use your favorite!!!)

  • coleslaw + pickles for topping (optional)

  • slider buns (I like the Sprouts brand Hawaiian rolls)

  1.  Place pork roast into the crock pot and sprinkle with salt, pepper, and garlic powder.

  2. Add red wine vinegar. Cover and cook on high for 6 hours.

  3. Remove pork and shred with a fork.

  4. Place back into the crock pot and pour in the BBQ sauce. Let cook on high for one additional hour.
