Grilled Fish Tostadas and a 21DFX Update

Week 2 is underway and I’m going strong in my second round of 21 Day Fix Extreme. I feel SO much stronger…it’s seriously NUTS! I usually use a set of 7 and 10 lb weights for the exercises. I swap out for the lighter weights on the tougher moves, but today I stuck with the “heavies” the WHOLE TIME!


I even think next week, I could up the weights for some of the exercises. Pretty cool stuff happening here in my own living room!

It’s funny, the thing about 21 Day Fix. There truly is no limit to the amount of times you can repeat this program and continue to show improvements. I saw someone ask a question to a friend online today…it went something like this:

“Do you really think you’ll get results in 21 days? I mean…I feel like that’s a scam.”

Hahahaha…excuse me while I laugh to myself. To answer that question…YES. Yes you will get results. And no…no it is not a scam. Well, I mean, it would kind of be a scam if you thought you could workout for 21 days, lose lots of weight and become super-model sexy, to then return back to your normal lifestyle and be set for the rest of your life. Yes…that would be a definite disappointment and you should ask for a better coach next time! 😉

Although the name says “21 Day Fix” there is NO LIMIT to the amount of times you can repeat the three week push. I always recommend taking a week off between rounds to let your body rest a bit and recover, but it’s about creating healthy habits and adapting it to your LIFE. Am I a broken record around here? I feel like I am. There are no “quick fixes.” There isn’t a pill that can fix your life and relationships and waistline all in one swoop. But there is a drug out there that can get pretty close if you let it become a part of your life. And that drug is health and fitness. And 21 Day Fix teaches you how to do both.

I met a woman this weekend who started 21 DF in February and has already lost 90 pounds. NINETY POUNDS, PEOPLE! I mean, think about it. Imagine if you hadn’t quit and given up on your New Year’s Resolution to shed those pounds. You, too, could be down 90 pounds by now. 🙂 Seriously, though, it’s truly amazing what a person can do when they chose to no longer accept the poor health habits they’ve implemented into their lifestyles.

And now…I’m off my soapbox. Sorry…it must have been the homemade Cajun spice rub I used on my tilapia tonight! Got me all spicy and stuff… 🙂


Grilled Fish Tostadas (21 DF Approved)

Serves 2


  • 2 filets of white fish (I used tilapia)

  • Cajun Dry Rub- 1 tsp each (Paprika, Cumin, Onion Powder, Salt, Pepper, Cayenne Pepper)

  • 1 tbsp Coconut Oil

  • 4 whole wheat tortillas (small sized)

  • Drizzle of Olive Oil

  • Toppings (mashed avocado, plain greek yogurt, lettuce, tomato, onion, hot sauce, shredded cheese, salsa, jalapeno, etc)


  1. Preheat the oven to 350 degrees.

  2. Mix your spices together to create the rub for your fish.

  3. Pat your fish dry with a paper towel and heavily coat both sides of each filet with your Cajun rub.

  4. Place in the fridge until you are ready to cook the fish.

  5. Prep all of your toppings. I personally used mashed avocado on the bottom, followed by a tbsp of plain Greek Yogurt. Then I added lettuce, tomato, onion, a little cheese, and a generous dash of hot sauce! 🙂

  6. Drizzle your tortillas with a little olive oil and bake for 10 minutes, turning halfway through.

  7. Once the tortillas go in the oven, heat your coconut oil in a grill pan.

  8. Add the fish and cook until a nice crust is formed (about 4 minutes on each side). Let rest while the tortillas finish. You could also cook this directly on the grill, but cooking times may vary!

  9. Chop the fish into small pieces and layer your tostadas (see step 5 for how I layered mine!).
