Veggie Supreme Personal Naan Pizzas

There are so many types of people on this planet, but I’m afraid I have to be blunt today.  If you don’t like pizza…I’m not sure you and I can see eye to eye! We really have nothing in common!  🙂  I kid, I kid!!!

Seriously, though.  As health conscious as I’ve become in the last couple years and as much as I try to eat whole, clean foods, I seriously can’t stop my passion for pizza.  It doesn’t matter if it’s from a chain, from a box, from a little old Sicilian lady.  If it has crust, pizza sauce, and some cheese, I’m in heaven.

I’m pretty sure it stems from childhood memories of that “Friday Feeling.”  If you grew up in the 80’s and 90’s you know the one I’m talking about.  The one that paired perfectly with ABC’s TGIF sitcom lineup (Perfect Strangers, Full House, Family Matters, Step by Step, etc).  The feeling that goes along with a weekend of relaxation ahead.  That Friday feeling where you get to stay up a little later, have maybe just one more can of pop than normal (yes, I call it pop), and that feeling that pizza was simply just a part of.  I grew up spending half of my weekends at my mom’s house and half of my weekends at my dad’s and it didn’t matter where I was.  There was always a constant.  Pizza.

I got really serious about my diet this last month as I am prepping to become a PiYo Instructor and a full time fitness coach.  There’s a lot of pressure with that and I try not to think about that end of it too much, but there is something important I’ve learned.  If you want to achieve goals, you can’t DO…you have to BECOME.  So, I’m working on removing a lot of processed foods and sadly, pizza from a chain/pizzeria has to get the heave-ho for now.

You know I’m a problem solver, though.  I don’t sit around feeling sorry for myself self THAT long!  I pout, shrug it off, and create a solution.  And this solution is SPECTACULAR!  🙂  Veggie Supreme Personal Naan Pizzas!  I triple dog dare you to not like it.  Seriously.  Triple dog dare you.

Veggie Supreme Personal Naan Pizza

(makes 2 personal pizzas)

Ingredients-

  • 1 package Stonefire brand Naan Bread (I find mine in the Deli section and I placed a picture below so you know what it looks like!)

  • 2 tsp olive oil

  • 1/4 cup of your favorite marinara sauce

  • Assorted Chopped Veggies (I LOVE to use red onion, green bell pepper, black olives, mushrooms, and cherry tomatoes)

  • 1/4 cup shredded mozzarella cheese

  • dried oregano, garlic powder, and crushed red pepper for topping

Directions-

  1. Preheat your oven to 400 degrees.  Place naan bread on a baking sheet and brush with a little olive oil (about a teaspoon for each).  I only use the baking sheet to help me get the bread/pizza in and out of the oven.  These turn out spectacular when you let them bake on the rack!

  2. Bake the bread for 5 minutes while you chop and prep the veggies.  Feel free to add meat or whatever other toppings you desire.  Don’t let me rain on your pizza parade! 🙂

  3. Remove naan and add 1/8 cup marinara to each pizza.  Sprinkle with 1/8 cup cheese on each and then add your toppings.

  4. Bake for another 5-8 minutes or until the cheese is bubbly.  If you like a little crisp to your cheese, hit BROIL for the last 2 minutes.

  5. Sprinkle the top with dried oregano, garlic powder, and crushed red pepper flakes.

  6. Indulge and enjoy your beautiful Friday!!! 🙂
