Day 1- 21 Day Fix Extreme and Hearty Beef and Butternut Squash Stew

Well, here I go!  Back from vacation and ready to push my fitness even further.  I just finished 60 days of PiYo and I want something that is going to be faster paced and butt kicking! So, 21 Day Fix Extreme it is!!!

Today I dove into the program with the first workout- Plyo Fix Extreme. It is NOT easy! 🙂 I forgot how hard this program pushes you (that’s why it’s called EXTREME, right?!) and I had to press pause on my workout three separate times today.  I NEVER DO THAT! That’s how heavy I was breathing! I needed a moment (or three) to catch my breath.

Despite the aggravation I felt during the workout, I got finished with it and felt like a million bucks! Like I conquered something amazing. And you know what?! I did! After the workout, I prepared a healthy favorite of mine- black bean burgers and baked sweet potato fries! I actually made a huge batch of the burgers last time and froze the rest. So today, all I had to do was thaw out the burger and slice up the potato. While I’m trying to detox from too much vacation, I skipped the bun and ate the burger by itself with a little ketchup and mustard and a slice of gooey provolone cheese on top.

Since I’m not really jumping onto this on a Monday, I plan on eating clean for the rest of the weekend and then start the meal planner on Monday. I like to take the weekends to plan out my meals for the week and do all of my grocery shopping via a LIST. Yes, that’s right. A list. I refuse to walk around a grocery store without one. It’s simply just torture! Since I returned from vacation to an empty fridge, I’m going to take this weekend to specifically plan out my meals and get to shopping!

One meal that is DEFINITELY going on my list next week is this one!  It is straight out of the 21 Day Fix Extreme Eating Plan and it is yummy! It is also very filling and if you are a fixer- it counts as 1 green and 1 red per 1.5 cup serving. ENJOY!!! 🙂

Hearty Beef and Butternut Squash Stew (21 DFX Approved)

Servers 6


  • 1 tsp olive oil

  • 1.5 lbs lean beef stew meat (cut into 2 inch cubes)

  • 1 medium onion, chopped

  • 1/2 green bell pepper, chopped

  • 1/2 red bell pepper, chopped

  • 4 cloves garlic, crushed

  • 2 medium tomatoes, chopped

  • 1 cup low sodium beef broth

  • 1 bay leaf

  • 1 tsp sea salt

  • 1 tsp black pepper

  • 2 cups cubed butternut squash

  • 1/4 chopped fresh parsley


  1. Heat oil in a large saucepan.

  2. Add beef and cook for 4-5 minutes until your beef is browned.  Turn frequently.

  3. Add onion and peppers to the pan.  Stir frequently for 5 more minutes until onion is translucent.

  4. Add garlic and cook for 1 more minute.

  5. Add tomatoes, broth, bay leaf, S/P, and bring to a boil.

  6. Once boiling, reduce to low and cook for 40 more minutes, covered.

  7. Add squash and continue to cook for 10 more minutes, stirring frequently.

  8. Add fresh parsley before serving.
